Mill & Mash
The grain is 20% of the flavor. We use a four grain mash that is milled right before we use it. A four grain mash bill produces the best sipping whiskey on the market.
The yeast and fermenting is responsible for 10% of the flavor. We purchase high quality yeast strains that are purpose built for whiskey and bourbon.
The still adds another 20% of the flavor. We run small 25 gallon batches each day. The still column design allows just the right amount of flavor to come over into the distillate. We know exactly where to run the still to get the same results, batch after batch.
50% of the flavor in our whiskey comes out in the aging process. The whiskey begins life in our spirit safe and then moves to a barrel. We add toasted and charred locally sourced American white oak that has been kiln dried and cut to specific dimensions. The toasting is the secret. We can consistently draw vanilla peaks from the wood with just a bit of almond stepping forward.
